The investigators found a substantial increase in the amount of schools providing healthy foods. For example, in 2014, more than 90 % of academic institutions offered whole grains each day for breakfast and lunch time. Several vegetables were offered at 79 % of schools, from about 62 % in 2000 up. And schools offering several fruits rose from about 68 % in 2000 to 78 % in 2014. More than thirty % of universities offered self-serve salad bars, and 54 % of universities that prepared their foods in-house used refreshing or frozen vegetables instead of canned vegetables.
